Simple Daiquiri

2 oz rum (Simple White is default, Spiced is awesome!)
¾ oz lime juice
¾ oz simple syrup

Build in shaker with ice cubes
Shake and strain into daiquiri coupe glass.
Float dehydrated lime wheel.

Bloody Uncle

1 ½ oz of Uncle John’s rum
3 oz Portland Bloody Mary Mix

Build in shaker with ice.
Pour all into an old fashioned glass.
Go crazy with the garnish but must include lemon wedge.

1740 Grog

1 oz rum (Oak as default)
1 oz lime juice
1 oz Sucanat syrup
3 oz cold water

Build in shaker with ice cubes, shake hard to add ice melt to the final drink, and pour into Old Fashioned glass. Garnish with lime wheel. (Historical Grogs had a 4:1 water to rum ratio. Shaking hard will add the last oz of water via ice melt.)

Maple Old Fashioned

2 oz rum Just Rum Maple Rested rum
1 bar spoon dark cane syrup
2 dashes of Angostura bitters

Place large cube into Old Fashioned glass.
Add rum, simple syrup, and bitters to glass.
Stir until chilled.
Use peeler to remove a large piece of orange peel.
Twist orange peel above ice cube to release oils, rub outside of orange peel around the rim, place twisted peel in glass. A cherry is optional but if you do, make it a good one! (we use Peninsula cherries)

Spiced Root Beer

1 ½ oz of Spiced rum
2 scoops of vanilla ice cream
1 bottle of soda Root Beer

Build in a highball glass beginning and ending with a scoop of ice cream.
Serve with remaining soda left in bottle.

Blackberry Lemon Drop

1 oz Blackberry Rum
1 oz lemon juice
1 oz simple syrup
3 blackberries

Rub lemon around the rim of a martini glass and sugar the rim.
Muddle 1 berry in the glass and muddle 2 berries in the shaker.
Build in shaker with ice, shaking hard to break up the berries.
Strain into the glass.
Float a dehydrated lemon wheel.
